Ham and Cheese French Toast

Tired of your typical french toast?
Why not stuff them with ham and cheese?
These two ingredients just belong to each other, you'll never go wrong with them.
It's definitely ideal for breakfast or even a quick weeknight dinner.

This Ham and Cheese French Toast tasted fabulous on its own!
I bet it'll taste great too, if I were to stuff some mustard and pickles for that sour tang.
Oh, how about sweet alternative to savoury stuffings?
Nutella and sliced bananas french toast with powdered sugar dusting for dessert!
Possibilities are endless. Yah, perhaps next time!


Ingredients

4 slices white or wholemeal bread, whichever you prefer
2 pcs honey baked ham
2 slices cheese
2 medium eggs
1/4 cup milk
salt and pepper
some butter

Method

Lay out the bread slices.  Fill with cheese and ham and top with the other bread slices.
Whisk eggs and milk in a shallow dish. Season with salt and pepper.
Heat a non-stick pan over medium heat. Add just a little butter.
Dip bread into egg mixture and turn to coat.
Cook in the pan for about 3 minutes each side or until golden brown.
Slice the ham and cheese french toast and serve.

Chicken Mayonnaise

So what was for breaky today?? I made Chicken Mayonnaise yesterday night and chilled them in the fridge for breakfast today.

We had our Chicken Mayo with loads of lettuce and filled them in Pita pockets and served with chopped chicky pops on the side.

Yummmmy ... even Tihani and Auni enjoyed them.

When Tihani saw me eating lettuce, she went "i want to eat vege too" .. so I gave her some and then she commented that I did not cook the veg .. and I said that they were meant to be eaten raw .. and she just finished eating them and didnt dare ask for more .. hehehe

Auni is definitely not choosy .. even after finishing her pita .. she still asked me for more lettuce and ate it just like that .. such a darling baby!

Here comes the recipe ..

Ingredients

400 gm chicken breast
salt and peper, to taste
enough mayonnaise
lettuce, torn
pita bread

Method

Boil the chicken breast with a little bit of salt.
Once cooked, drain them then shred.
Combine shredded chicken, salt, pepper and mayonnaise.
Fill pocket of pita, with chix mayo and lettuce.

So bloglings, yet another easy to whip breakfast idea just for you!

Banana Pancakes

Banana is one of the more popular fruit highly consumed in my household.

I love them, kids love them, hubby loves them and parents-in-law too love them .. hehe .. easier said, EVERYONE in my home loves them.. ;-)

Bananas, of course, contain nutritional values like proteins, carbo and also fiber.

I had bought a comb of bananas yesterday and so yesterday before I went to sleep, I thought that I would make Banana Pancakes for breakfast today. Why pancakes? Obvious reason being, they are simple to make!

This morning when I woke up, I looked through the internet for a banana pancake recipe and found this.

Based on the recipe above, I tweaked it to suit my taste or rather the kids' taste.

Ingredients

1 cup self raising flour
2 tbsp sugar
a pinch of salt
1 egg
1 cup milk
2 tbsp oil/butter
2 ripe bananas, mashed
1 tsp vanilla essence

Method

In a large bowl, mix flour with sugar and salt.
In another bowl, mix well eggs, milk, oil and mashed bananas.
Incorporate wet ingredients into dry ingredients.
Mix well until mixture is free from lumps.
Heat a non stick pan and use a 1/4 cup measuring cup to form each pancake.
Wait till bubbles start to appear on pancake and edges are brown then turn over for a further minute.

Mine was served warm with maple syrup! How good can my Sunday breakfast get?!?!

Next time, I will experiment with other fruits such as apples or pears OR perhaps make savoury ones with shrimps or potatoes!

Egg Mayo Sandwich

Eggs though high in cholesterol are highly consumed in each household. It is really a versatile cooking ingredient. It can be soft boiled, hard boiled, sunny side up, scrambled, etc.

I made Egg Mayo Sandwich for breakfast today .. a classic one indeed.

Ingredients

5 hard boiled eggs, shelled
salt and peper, to taste
4 tbsp mayonnaise
lettuce, torn
tomato, sliced
white sandwich bread, sliced
margarine

Method

Combine eggs, salt, pepper and mayonnaise.
Spread margarine on a bread then egg mixture.
Top with lettuce and tomatoes.
Lastly top with another slice of bread.

Simple? Why dont you give it a try!

Pancake for BF and Spring Roll for T

My bil and nieces came this morning. When I asked them whether they had breakfast (BF), they said they had theirs at macdonalds.

Ahah .. dat gave me an idea of whippin Pancakes for my gerls .. i asked if they had space for more pancakes and the answer was yes.

I said these to my nieces "These pancakes aint nice as the ones at MacDonald's"
They answered "Yah"
And them being the goody goody gerls, they went further "But Auntie Murnie, this is homemade!"

Hehehe .. smart gerls who just didnt want to hurt my feelings. Dun the heart shaped pancakes look pretty?!?! (well, the pic dun do justice though) Well, they tasted good with maple syrup, nevertheless.

Ingredients

1 1/2 cups flour
2 tbsp sugar
2 eggs, beaten
1 1/3 cups milk
butter

Method

Mix flour with sugar. Make a well, and add the beaten eggs and milk.
Whisk well to form smooth batter.
Heat butter in a non stick pan and pour 1/4 cup batter in.
Wait till bubbles start to appear on pancake and turn over.
Serve warm with maple syrup.

For tea, I made Spring Rolls with Potato & Mince Meat Fillings. My mum gave me the fillings yesterday. She might have made the fillings to make something but I think she abandoned the idea and gave me them instead.

Since I have spring roll wrappers at home, I made them for tea (T).

And so we had these with hot cuppa tea on a cold rainy day.

Kacang Phool

It is Sunday today and as any other Sundays, we would eat breakfast together. I prepared Kacang Phool. We ate this with this yummy stuff with warm baguette.

Ingredients

Condiments
6 limes, halved
2 onion, chopped
2 grean chillies, chopped
6 sunny side ups eggs

The beans
3 onion, 2 ground and 1 roughly chopped
5 pips garlic
1 cm ginger
5 cm cinnomon stick
1 star anise
1 tbsp ground dried chilli
1 tsbp curry powder
250 gm minced meat, precooked
2 cans broad beans
ghee
salt

Method

In a blender, grind onion, garlic and ginger. Put aside.
In a blender, grind the broad beans roughly.
Pound cinnamon stick and star anise in a pestle and mortar.
Heat some ghee in a pot and fry the ground and pound ingredients and curry powder till fragrant and crisp.
Put in minced meat and lastly the broad beans.
Add salt to taste and cook thru.

Plate the kacang phool and top it off with lime, chopped onion, chopped green chilli and sunny side up. Serve with warm baguette.

Big Breakfast .. Kinda

My hubby and I went grocery shopping yesterday and saw baked beans and both of us commented that we havent had that for a long time now. So we bought a tin and decided to eat that for breakfast today.

This was our Big Breakfast which consisted of baked beans which I refried with some onions, sunny side up egg, onion rings, fish bites and toasts, we like ours toasted jus slightly.

Sausage Bread Roll

My bro in law + family + his wifey's family will be coming over to my house tomorrow to pay my fil a visit.

I had planned to serve them mi soto and for the kids I made them Sausage Bread Rolls.

Ingredients

10 pcs bread
10 pcs chicken franks
glue, made of flour and water
1 large egg, beaten and seasoned with salt
breadcrumbs
oil for frying

Method

Roll bread to a thin layer using a rolling pin.
Place hotdog on bread and roll. Use "glue" to stick.
Then dip it in egg and lastly roll it on breadcrumbs.
Heat oil and fry the rolls till it is golden brown.
Serve hot with chilli mayo.

You may make the sausage bread rolls in advance and store them in freezer.

Oteh-Oteh (Fritters)

For breakfast dis morning, I made Oteh-Oteh. This originates from Indonesia. It is really a nice snack for bfast or for tea. Dip these in chilli sauce accompanied with a cup of hot tea .. mmmm ...

I have to thank my bro's maid for sharing this recipe with me.

Ingredients

500 gm flour
500 gm prawn, cleaned and diced
2 carrots, shredded
100 gm beansprouts, tail picked
1 big onion, pounded
6 cloves garlic, pounded
some cilantro, chopped
a pinch of salt
1 tsp of chicken stock
1/2 tsp white pepper
enough water
oil for frying

Method

Mix all the ingredients above with just enough water.
Batter should be thick.
Heat oil in a non stick pan.
Put tablespoons of batter and deep fry till golden brown.

Eat these hot and dipped in chilli sauce.

Eggs and Sausages

Whoa .. i havent been productive in the kitchen lately. I have been hit by the virus called "LAZY".

Last Thursday and Friday, I attended some Stress Management Course - "Stress Management through Body Awareness" by Bob Feldman. It was total relaxation.

After course on Friday, I managed to catch up with an old fren, Su and we kinda went coffeeshop hopping .. hehehe. Though the meet up was short, we had a good time chatting. Su, if you are reading this, we sure gonna do it again sometime right??

Anyways, back to cooking. I prepared something simple for breakfast today, ie. Eggs and Sausages. Hmm .. i know how unhealthy it is to eat processed food eg. sausages, but hey, these are nice comfort food. So as not to feel bad about it, I baked the eggs instead of frying them.

Ingredients

6 eggs, beaten
1 cup milk
1 onion, finely diced
5 tbsp mince meat, precooked
salt and pepper to taste

Method

Preheat oven to 180C and grease 6 one cup muffin tins.
Mix everything together.
Pour into the muffin tins.
Bake for about 30 mins till cook.

Serve baked eggs with boiled sausages.

The "Versatile" Crepe

On Sunday afternoon, while hubby was doing the household chores, I decided to make myself busy in the kitchen. I decided to make crepes for my angels. Since they wanted to eat eggs for lunch, I served them crepes and scrambled eggs .. more so like brunch eh.

One thing about crepes is that they are pretty versatile. While my angels ate them with eggs, I had them with nutella. I basically just spread some nutella on the crepes and rolled them up.

That was a really light and yummy treat for me!
