Bday Dinner, Concert and "Goodie Bag"

It is my sister in law's birthday today. Actually I totally forgot about it. How could I??

My initial plan was to bring my kids and hers to Downtown East to just while our time and perhaps eat at MacDonalds. When I called sil's kids up, they said "Today is mummy's bday and we have a concert for her with a break in between ...." At that point, in my heart, I went "Danget! I forgot again"

So after my hubby and I fetched our kids, we fetched our nieces and head down to the airport instead to meet their daddy and mummy. We had dinner at Swensen's (oops! I forgot to snap pix of our dinner).

After dinner, we head down to sil's house and watched the kids perform their concert. They are such talented kids and aint they sweet, they really practiced hard to perform for their dearest mummy. They emceed, did cheerleading, modelled, played the piano, sang and danced for the person whom they appreciate most, "Your Highness Lily"!

Here are pix of her kids, Adriana and Aida and also Nadia, a girl whom sil is babysitting performing their last number.

Thats Aida, providing "light refreshments" to "concert-goers" during the break.

We truly truly enjoyed ourselves tremendously.

My family didnt go home empty handed. We brought home a bag of German goodness - Hanuta and Giotto that Budi brought back from Germany and also a tin of Girl Guide's choc coated peppermint cookies.

To my bro - Jus dun be jealous k! No worries aite, I will share these with u! .. hehehe .. ;-)
To sil, Lily - Happy happy birthday to you! Hope I didnt ruin your initial birthday plan!

Mum's Chicken in Coconut Sauce & Kai Lan in Oyster Sauce

My older daughter is feeling under the weather. She's down with cough and slight bronchilitis. I have started her with her ventolin yesterday. Today, I brought her to see the doctor and doctor had advised that we continue with the ventolin for 3 more days and he passed me some medicine for her cough and running nose.

We stayed at my mum's place today. We had late breakfast which means our lunch was late too .. ehehe

And today my mum cooked for us Chicken in Coconut Sauce and Kai Lan in Oyster Sauce.

Here is the recipe for My Mum's Chicken in Coconut Sauce (Ayam masak Lemak).

1 whole chicken cut into 8 pieces, cleaned
2 potatoes, skinned and quartered
200ml coconut milk
1 tomato, quartered
2 tbsp coriander seeds
1/2 tsp cumin seeds
2 onion, roughly chopped
5 pips garlic, roughly chopped
1 cm fresh turmeric
1 candlenut
2 red chillies, roughly chopped
1 lemongrass
4 lime leaves
salt to taste

In a blender, grind coriander seeds, onion, garlic, turmeric, cumin, candlenut and chillies with a lil bit of water.
Heat some oil in a pot and fry the ground ingredients till fragrant and crisp.
Press the end of lemongrass with a pestle and tear some lime leaves and put them in the pot.
Add some salt then add about a cup of water and leave it to boil.
Then add in the coconut milk and leave it boil again.
When the sauce starts to boil, add chicken and then potatoes.
Leave it to simmer till the chicken and potatoes are cooked through.
Lastly add the tomatoes and turn off heat.
Serve hot with rice.

This is how my mum cooked the Kai Lan in Oyster Sauce.

Kai Lan vegetable, washed them clean and sliced
1 onion, sliced
1 garlic, chopped
1 red chilli, sliced
1 tbsp oyster sauce
a dash of chicken granules
salt to taste

Heat some oil in a wok.
Once hot, add onion, garlic and chilli and fry till fragrant.
Add in the kai lan stems.
Then add a pinch of salt, chix granules and oyster sauce.
Lastly add the kai lan leaves and turn off heat.

This is my late lunch - hot rice with my mum's chicken cooked in coconut sauce.

Yummy .. who in the world doesnt enjoy mum's cooking .. :-))

Tihani's Skool Party

It is the last day of school for Tihani. The school ended it with an Eid Party and had requested that parents join in the party. It was a potluck party and I brought Epok-Epok which I ordered from my younger daughter's babysitter. This epok-epok is non spicy so the kids as well as parent will enjoy them. The filling is just fried chopped potatoes and eggs.

The epok2 which I brought to kindy.
